L'Arôme by the sea

Located at Kalim Bay, L’ARÔME BY THE SEA features an elegant minimalist design throughout its two distinct areas: the restaurant level that highlights the art and delicacy of contemporary french cuisine with the Swiss Alps influence and a rooftop bar to have a casual sunset cocktail, also perfect for aperitif or digestif. Elegant and tranquil, the intimate dining room is inspired by its coastal setting. A light blue palette fuses with dark blue velvet furnishings to create a soothing backdrop, allowing gastronomical encounters to take center stage. The L’ARÔME BY THE SEA experience is enhanced with dining on the seafront seats, complemented by discreet personalized service, provided by the dynamique and passionate team.

In July 2022, L'ARÔME BY THE SEA has been featured in the MICHELIN Guide Thailand.

Chef Yannick Hollenstein

Our Executive Chef Yannick Hollenstein was part of the Swiss Culinary National Team that won the Expogast Culinary World Cup in 2014. He was Sous Chef of Restaurant Mammertsberg * in Switzerland when it has been awarded with one star in 2015. The multi-award-winning talent has already gained valuable experience in many Michelin starred restaurants around the world including 3-star Andreas Caminada *** in Switzerland and 2-star Mathias Dahlgren ** in Sweden. 

"As native of Swiss Alps, I put my culture heritage into my creations. Alpine cuisine has always meant making the best of what is available in the region. At L’ARÔME BY THE SEA, I include exquisite delicacies from abroad such as black truffle, Oscietra caviar or japanese Busy Wagyu, but also work on exploration of regional produce as Phuket lobster, wild-caught Krabi blue crab, hand picked local clams or various indigenous plants. Surrounded by this tropical island scenery, I find inspiration in the rhythm of the waves crushing the shore. I am very excited for all that is coming.  Each day brings my team and me closer to find our groove and truly create something unique and memorable."

Contemporary French Cuisine

Chef Yannick carefully balances avant-garde french culinary techniques and his Swiss Alpine heritage to create new textures, flavours, colours and aromas. 

 

Clever combination of tradition and innovation is reflected throughout L’ARÔME BY THE SEA’s menu: Chef Yannick confidently celebrates his Swiss Alps identity with his smoked cheese fondue ravioli and presents his interpretation of contemporary french with duck foie gras au torchon and pan-seared with rhubarb, fresh elderflower and tamarind, honey cured, beeswax aged and rosemary wood smoked Muscovy duck served with red cabbage, blackberry. 

Signature seasonal offers also include the variation of thai mango and yellow peach, Phuket sea urchin made of exotic fruit mousse, chocolate covered mango heart and glazed with charcoal and passion fruit, giving you light, delicate yet full flavoured ending to a perfect meal.

 

Cooking in Phuket, Chef Yannick is inspired by the fabulous local bounty of fresh seafood, vegetables, aromatic herbs and spices. At L’ARÔME BY THE SEA, he incorporates the use of premium imported products, such as french oysters, turbot and japanese Busyu wagyu and introduces locally grown, in-season produce where possible, such as Chiang Mai strawberry, peach and tomato, Phuket lobster, wild-caught Krabi blue crab, hand picked local clams or local grown sea grapes. 

Our Menu Prestige in 5 or 7 sequences are showpieces offering a deep and memorable journey through the restaurant’s a la carte menu and never fail to surprise with their precise execution and whimsical ideas. 

Over 200 fine wines from the carefully curated cellar harmoniously pair with the cuisine at L’ARÔME BY THE SEA. Our wine list made up entirely of selections from France, with a particular focus on the two main wine regions of France: Burgundy and Bordeaux.

Catch of the day by our chef

For Yannick, his love for fishing and his career as a chef practically go hand-in-hand. Being a professional chef, the advantage to his catch is, of course, the stunning meal that results after.

 

Whenever possible, most fish are caught off the coast personally by chef himself or bought directly from our trusted local fishing boats when returning to the shore.

« Paris meets Phuket » We will hold a collaboration event with our sister restaurant FANFAN Paris on the 25th, August 2022, at L’ARÔME BY THE SEA, where our two restaurants chefs team up to prepare a special dinner. We will be offering a new 8-course tasting menu featuring the best of two restaurants, incorporating French caviar, Phuket lobster and honey cured dry aged duck with a twist of fusion flavor. Please join us and have a taste of Paris right by Kalim beach. 

« L’Arôme by the sea x Samut » We will hold our collaboration event with restaurant SAMUT on the 1st of September 2022, at L’ARÔME BY THE SEA, where chefs from these two restaurants team up to prepare a special dinner. We will be offering a new 8-course tasting menu featuring the best of our two restaurants. 

 

Please note that we are unable to accommodate vegetarian, vegan, seafood allergy, dairy or gluten intolerance for the special collaboration menu. A non refundable deposit of 2000 THB per person is required to secure your booking.

RESTAURANT POLICIES

Based on the invaluable feedback of our guests, we adhere to specific policies at L’Arôme by the sea. 

 

SMART CASUAL DRESS CODE

Our dress code is smart casual though we strongly recommend dressing up for the occasion. Athletic or sports uniforms, slippers, beach sandals and flip-flops are not permitted for dining on our restaurant level. Gentlemen must avoid any sleeveless clothing, shorts and open shoes. Please note that our smart casual dress code applies to children as well. 

 

CHILDREN

We cater to children above the age of 7 on our restaurant level. 

 

CORKAGE

corkage fee of 1000฿ per bottle will be charged to the bill if you bring your own bottle of wine.

 

SPECIAL REQUIREMENTS

If your guest have any dietary requirement or allergies, or if you will celebrate a special occasion, please let us know in advance, so that our team can design a special menu for your guest. As our tasting menu features raw ingredients (eg. seafood), guests are able to swap with dishes from our vegetarian tasting menu. We are unable to accommodate guests with dairy allergies or intolerance. 

For table above 6 guests, we will only serve the Menu Prestige.

 

DEPOSIT PAYMENT AND CANCELLATION POLICY

Any reservation made by a guest/company can be amended or canceled up to 72 hours prior to the reservation time without incurring any charge. Any cancellation, no-show or change made less than 72 hours prior to the reservation time will incur a cancellation fee of the deposit which will be applied without any prior notice. The deposit will be adjusted against dinner at the restaurant. Please note that we cannot guarantee your booking until this deposit has been received.
