Julien BURBAUD, finalist on the third season of TOP CHEF in France, and previously worked alongside renowned French chefs like Joël ROBUCHON, Yannick ALLENO, and Alain PASSARD, is now showcasing his innovative and precise modern French cuisine at L'ARÔME AT BLUE TREE. As the former Executive Chef of FANFAN Paris under FRANCE LAROME GROUP, he brings a lively and dynamic culinary experience to our restaurants. 

In the heart of culinary delight, a new chapter has begun with the grand opening of L’ARÔME AT BLUE TREE. This gastronomic haven promises to tantalize taste buds, elevate dining experiences, and redefine the art of indulgence.

With a spectacular view overlooking the stunning BLUE TREE Lagoon, L’ARÔME AT BLUE TREE offers exquisite modern French cuisine combining the elegance and refinement of classic French culinary principles with contemporary influences. Chef Julien BURBAUD pushes the boundaries of French cuisine by incorporating premium ingredients and techniques to create dishes pleasing both eyes and palates.

 

On the ground floor, L’ARÔME AT BLUE TREE all day dining is a great oasis to relax and enjoy the beach club atmosphere whilst the terrace deck is the perfect location to enjoy refreshing and delightful cocktails throughout the day. All day dining area of L’ARÔME AT BLUE TREE serves a variety of snacks, seafood platter, pasta, pizza, sushi and sashimi choices with a focus on healthy and organic ingredients. It provides a cosy and casual dining experience. 

 

On the first floor,  executive chef Julien BURBAUD offers a modern and innovative French cuisine. From the selection and preparation of ingredients to the execution of cooking techniques, L’ARÔME is always well known for its meticulous attention to the detail and L'ARÔME AT BLUE TREE guarantees an unparalleled gastronomic experience that will transport you on a unique culinary adventure.

 

The second and third floors are exclusively for adults – an area of tranquility to get away from the crowds and loud noises. This space will offer food from both outlets below – this area with more privacy and seclusion will also be available for private events. A more premium selection of wines and champagnes will be offered from the wine cellar in addition to cigars. It will be a great location to enjoy Happy Hour as the sun fades across the horizon.

 «I’ll always remember the signature mashed potato I ate at the two-star table of Robuchon as a guest when I was twenty years old. It was so different. It is one of those dishes that you remember for life and in a way, it changed my life», Julien says. 

 

This first culinary bomb was the element that triggered his career since it motivated him to send his CV to Monsieur ROBUCHON for a job application.  And the grand master gave him a chance. Despite the fact that he later worked in numerous esteemed kitchens and collaborated with Chefs like Yannick ALLENO, Philippe MILLE, Alain PASSARD, Jean-Marc NOTELET... Julien felt particularly indebted to Joël Robuchon, the one he considers to be his mentor, who played an essential role in shaping him into the accomplished Chef he is today...

 

Having worked in some of the best culinary establishments for over two decades, Julien has honed his taste buds, developed a strong sense of discipline and dedication, and acquired extensive knowledge and appreciation for quality ingredients. If there's one thing Julien took away from his remarkable journey on the popular TV show, TOP CHEF France, it's the taste of adrenaline and change of scenery that continue to shape his cooking style. 

 

Julien took part in the creation of 1K restaurant in Paris and was awarded two toques by Gault Millau France. Subsequently, he joined the prestigious France Larome Group, where he successfully introduced FANFAN, the first Franco-Asian fine dining restaurant in Paris. FANFAN's exceptional culinary offerings earned it a coveted spot in the renowned MICHELIN Guide France in 2019, just seven months after its launch.

 

« I must have been born Asian in a previous life », Julien says with a smile. « I have a great admiration for Asia, for its landscapes, cultures, and cuisines. But I cannot explain where this natural affection comes from ».

RESTAURANT POLICIES

Based on the invaluable feedback of our guests, we adhere to specific policies at L'Arôme at Blue Tree. 

 

FESTIVE DAYS

On festive day's only special menus will be served.

CORKAGE

corkage fee of 1000฿++ per bottle will be charged to the bill if you bring your own bottle of wine.

SMOKING

Cigarette smoking is only allowed on our outdoor beach club deck and marijuana smoking is not allowed in our restaurant.

 

SPECIAL REQUIREMENTS

If your guest have any dietary requirement or allergies, or if you will celebrate a special occasion, please let us know in advance, so that our team can design a special menu for your guest. As our tasting menu features raw ingredients (eg. seafood ), guests are able to swap with dishes from our vegetarian tasting menu. 

DEPOSIT PAYMENT AND CANCELLATION POLICY

A deposit payment is required for parties above 6 people. Any reservation made by a guest/company can be amended or canceled up to 72 hours prior to the reservation time will incur a handling fee of 10% and 90% of the pre-payment will be returned. Any cancellation, no-show or change made less than 72 hours prior to the reservation time will incur a cancellation fee of the deposit which will be applied without any prior notice. The deposit will be adjusted against dinner at the restaurant. Please note that we cannot guarantee your booking until this deposit has been received.
