Located at Kalim Bay, L’ARÔME BY THE SEA features an elegant minimalist design throughout its two distinct areas: the restaurant level that highlights the art and delicacy of contemporary french cuisine with the Swiss Alps influence and a sunset deck to have a casual sunset cocktail, also perfect for aperitif or digestif. Elegant and tranquil, the intimate dining room is inspired by its coastal setting. A light blue palette fuses with dark blue velvet furnishings to create a soothing backdrop, allowing gastronomical encounters to take center stage. The L’ARÔME BY THE SEA experience is enhanced with dining on the seafront seats, complemented by discreet personalized service, provided by the dynamique and passionate team.
In July 2022, L'ARÔME BY THE SEA has been featured in the MICHELIN Guide Thailand; In August, L’ARÔME BY THE SEA has been awarded Thailand’s Favourite Restaurant; On September 1st, L’ARÔME BY THE SEA has been awarded number 2 of the TOP25 Restaurants Awards Phuket 2022.
Head Chef Yannick Hollenstein
Our Head Chef Yannick Hollenstein was part of the Swiss Culinary National Team that won the Expogast Culinary World Cup in 2014. He was Sous Chef of Restaurant Mammertsberg * in Switzerland when it has been awarded with one star in 2015. The multi-award-winning talent has already gained valuable experience in many Michelin starred restaurants around the world including 3-star Andreas Caminada *** in Switzerland and 2-star Mathias Dahlgren ** in Sweden.
"As native of Swiss Alps, I put my culture heritage into my interpretation of contemporary French cuisine. Alpine cuisine has always meant making the best of what is available in the region. At L’ARÔME BY THE SEA, I include exquisite delicacies from abroad such as French foie gras, Kristal caviar, Brittany blue lobster or Japanese Wagyu, but also work on exploration of regional produce as Phuket lobster, wild-caught Krabi blue crab, hand picked local clams or various indigenous plants. Surrounded by this tropical island scenery, I find inspiration in the rhythm of the waves crushing the shore. I am very excited for all that is coming. Each day brings my team and me closer to find our groove and truly create something unique and memorable."

Contemporary French Cuisine
Chef Yannick carefully balances avant-garde french culinary techniques and his Swiss Alpine heritage to create new textures, flavours, colours and aromas.
Clever combination of tradition and innovation is reflected throughout L’ARÔME BY THE SEA’s menu: Chef Yannick confidently celebrates his Swiss Alps identity with his smoked cheese fondue ravioli and presents his interpretation of contemporary french with duck foie gras au torchon and pan seared with rhubarb, fresh elderflower and tamarind, honey cured, beeswax aged and rosemary wood smoked Muscovy duck served with red cabbage, blackberry.
Cooking in Phuket, Chef Yannick is inspired by the fabulous local bounty of fresh seafood, vegetables, aromatic herbs and spices. At L’ARÔME BY THE SEA, he incorporates the use of premium imported products, such as french oysters, turbot and japanese Busyu wagyu and introduces locally grown, in-season produce where possible, such as Chiang Mai strawberry, peach and tomato, Phuket lobster, wild-caught Krabi blue crab, hand picked local clams or local grown sea grapes.
Our Menu Prestige is served in 9 sequences are showpieces offering a deep and memorable journey and never fail to surprise with their precise execution and whimsical ideas. Over 300 fine wines from the carefully curated cellar harmoniously pair with the cuisine at L’ARÔME BY THE SEA.
Head Sommelier Mario Sirignano
Our award winning Head Sommelier Mario Sirignano was born in Aix-en-Provence in the balmy southern France, Côte-d’Azur. He knew from a young age that food and beverage would be his profession. After graduated from the prestigious Lycée Hôtelier de Marseille with a baccalaureate in Catering and Tourism, he went on winning the competition Trades World Skills Olympics as the National 5th Best Sommelier. This award launched Mario’s global career, going through exotic destinations such as Seychelles, Australia, Hong Kong, New York City, St. Bart and the North pole. In Hong Kong, he was the Head Sommelier of the famous restaurant On Dining which won 1 Michelin star in 2016, then 2 Michelin star in 2017.
The wine program is managed by our Head Sommelier Mario Siriganano. The wine list features over 150 references with the majority from France with a focus on Bordeaux and Burgundy – in addition to this Mario’s selection also includes many smaller appellations which help to express the wide terroir which is available in French wines and the huge variety of different styles which can match perfectly with the cuisine of Chef Yannick Hollenstein.
Mario takes great pleasure in sharing his passion for wines with our customers on a daily basis and according to him:
"Our cellar reflects the richness and diversity of French vineyards but not only that, we have also included some selections from across the world which help to elevate the overall offering giving guests a taste of what is not always possible in French winemaking. At L’Arome our cuisine is heavily influenced by the sea and this goes hand in hand with our current wine selection which has a heavier focus on white wines with texture and acidity to pair with the freshly caught seafood on offer.
Each bottle and vintage is delicately balanced and I hope that my understanding of these can help to enhance the overall experience for guests in our restaurant.

The Sunset Deck
Located on the rooftop of L’ARÔME BY THE SEA the sunset deck is the perfect location to enjoy fresh imported seafood, champagne and watch the sun setting over the horizon. Guests are treated to different varieties of French oysters, caviar and other fish roes and carefully selected champagnes.
The Deck is open from 4pm until late and features lives jazz music on Friday evenings from 5pm.

RESORT CHIC DRESS CODE
Our dress code is resort chic though we strongly recommend dressing up for the occasion. Athletic or sports uniforms, slippers, beach sandals and flip-flops are not permitted for dining on our restaurant level. Gentlemen must avoid any sleeveless clothing, shorts and open shoes. Please note that our smart casual dress code applies to children as well.
On festive day's only special menus will be served.
We cater to children above the age of 7 on our restaurant level.
A corkage fee of 1500฿ per bottle will be charged to the bill if you bring your own bottle of wine.
Cigarette smoking is only allowed on our outdoor terrace and marijuana smoking is not allowed in our restaurant.
If your guest have any dietary requirement or allergies, or if you will celebrate a special occasion, please let us know in advance, so that our team can design a special menu for your guest. As our tasting menu features raw ingredients (eg. seafood), guests are able to swap with dishes from our vegetarian tasting menu. We are unable to accommodate guests with dairy allergies or intolerance.
For table above 6 guests, we will only serve the Menu Prestige in 9 sequences / Festive Menu during festive season.
DEPOSIT PAYMENT AND CANCELLATION POLICY
Any reservation made by a guest/company can be amended or canceled up to 72 hours prior to the reservation time without incurring any charge. Any cancellation, no-show or change made less than 72 hours prior to the reservation time will incur a cancellation fee of the deposit which will be applied without any prior notice. The deposit will be adjusted against dinner at the restaurant. Please note that we cannot guarantee your booking until this deposit has been received.
